One of my first batches of homemade chocolate looked nothing like the chocolate I had pictured in my head.

It was soft. The surface was dull. Even the smell seemed wrong to me. The ingredients tasted good on their own, so I couldn’t understand what I had done wrong.

I genuinely thought for a while that the recipe was the problem.

Then I started reading about tempering chocolate, and realized there was an entire part of chocolate making that I had barely understood.

That crisp little snap when you break a good chocolate bar? It doesn’t happen by accident.

What does tempering chocolate actually do?

Chocolate contains cocoa butter, the natural fat found in cacao. Cocoa butter can crystallize in several different forms as chocolate cools, and those crystals affect what the finished chocolate looks and feels like.

Tempering is the process of carefully heating and cooling chocolate so that the cocoa butter forms the stable crystal structure a chocolate maker wants.

That sounds much more technical than it feels when you’re standing in a kitchen with a bowl of chocolate.

In practice, temperature matters enormously. Chocolate that is properly tempered can set with a smooth, glossy surface and a firm texture. Break it, and you hear that clean snap.

My early batches didn’t have it.

They tasted like chocolate, obviously. But they were softer than I expected, and the finish looked flat. I remember wondering how something could taste close to right and still feel so obviously wrong.

So I kept reading. And practicing.

Why does chocolate snap when you break it?

The snap comes partly from the structure created as cocoa butter crystallizes in a stable form.

When chocolate is properly tempered and has set correctly, that organized crystal structure helps give the finished bar its firmness. Bend or break the bar and, instead of slowly giving way, it can fracture with that wonderfully recognizable sound.

I remember finally getting it in my kitchen. After batches that had been too soft and dull, hearing a bar break cleanly felt like a small victory.

I had been so focused on ingredients when I started making chocolate that I hadn’t appreciated how much technique could change the finished result. The same ingredients can behave very differently depending on what you do with them.

And chocolate is surprisingly unforgiving about temperature.

A few degrees can matter. So can how the chocolate is cooled and handled. I learned quickly that simply melting chocolate and waiting for it to become solid again is not the same thing as tempering it properly.

Why does chocolate turn white?

The first time you see pale streaks or a whitish coating on chocolate, it is easy to assume something has gone terribly wrong.

Often, what you're seeing is called chocolate bloom.

There are two main types. Fat bloom involves fat moving or recrystallizing at the surface of the chocolate. Sugar bloom happens when moisture comes into contact with the chocolate, dissolves some of the sugar, and then leaves sugar crystals behind as the moisture evaporates.

The result can be a white, gray, or streaky-looking surface.

Temperature changes can contribute to bloom, which is one reason chocolate can be a little particular about how it is stored. Moisture can cause problems too.

I used to think appearance was mostly cosmetic. Once I started working with chocolate, I understood how much the surface can tell you about what happened to a bar along the way.

That said, I still occasionally look at chocolate and have to think about exactly what I’m seeing. It isn't always obvious from appearance alone.

Is chocolate bloom the same as mold?

No. Chocolate bloom and mold are different things.

Bloom is related to changes involving the fat or sugar in chocolate. It can make the surface look pale, dusty, gray, or streaky. Mold is microbial growth and is a different issue entirely.

If you're looking at a chocolate bar at home and genuinely aren't sure what you're seeing, I wouldn't try to diagnose it from an internet description. Packaging condition, storage, moisture, and the appearance of the chocolate can all matter.

Sometimes the sensible answer is simply not to eat something you're unsure about.

What tempering taught me about making chocolate

Before I started making chocolate, I thought mostly about recipes. What goes into the bar?

Chocolate has to be made.

Roasting, grinding, refining, conching, tempering, cooling. Each step does something different, and I had to learn that slowly. Usually by getting something wrong first.

Very wrong, occasionally.

Those soft, dull early batches are part of why I became so interested in how chocolate actually works. I started because I was a mom standing in grocery aisles turning wrappers over. I certainly didn't expect to become the person thinking about cocoa butter crystals.
