I'm Nolla. I have two kids, and my son is in love with chocolate.
I mean really in love with it. The way children love a few things completely, with no interest in moderation. And for a long time, what I kept telling him was no.
I'd stand in the grocery aisle turning bars over, reading the backs of them. I kept wishing I could find something simpler, made with ingredients I understood and chocolate he would genuinely love. Back on the shelf it went, and I'd say no again.
Eventually, I got tired of hearing myself say it. So I started making chocolate in my kitchen.
The taste was there almost right away, which surprised me. But something was off. It came out soft and dull. The smell wasn't right. And I couldn't work out why. So I read. Then I read some more. I learned about tempering and made batch after batch that didn't quite work.
Until one did.
It set with a proper snap, and my son ate it the way I'd been hoping he would. His sibling finished the rest.
I teach marketing for a living. I've spent years showing other people how to build a brand and had never built one of my own. This is the first thing I've made where the reason came before the strategy.
That kitchen recipe eventually became Chocoraph: a bean-to-bar milk chocolate made with Ecuadorian cacao, whole milk, and ground dates.
I made this bar so I could stop saying no.
